A new cutting edge meat science center is being proposed by representatives from UW-Madison.

The new Center for Meat Science and Muscle Biology would give UW-Madison a unique, isolatable processing plant where companies could validate formulas and processes without introducing pathogens into their facilities. 

Dan Schaefer, Interim Dean for Instruction in the College of Agricultural and Life Sciences would be spearheading fundraising efforts.

The center would be designed and equipped to fully simulate industry practices. A pilot plant would allow researchers to pursue antimicrobial interventions from early post-harvest through consumer-ready meats.

The project is currently slated for the 2013-2015 biennium.  It would depend on approximately $20 million in state funding with another $20 million from the UW-Foundation and public funds. 

The Wisconsin Association of Meat Processors announced last week that their organization will donate $100,000 to the efforts.
